1. Is Sg1008p enough to power up the EAP 225 ?
2. Will The connection be Gigabit and Poe at the same time ?
3. What is the recommended configuration of the Cat6 pairs ?

Yes. EAP225 max. power consumption is 10.15W, TL-SG1008P can provide 15W per port, 55W for all four PoE ports.

2. Will The connection be Gigabit and Poe at the same time ?


Sure.

3. What is the recommended configuration of the Cat6 pairs ?


TIA-568A or TIA-568B, doesn't matter. Make sure to use good quality cable to keep energy loss as low as possible.
