may I hook (via lan to the Bridge's Router) an other 7210 and set that as range extender or AP?

As a relay to another AP yes; as a "range extender" for local WLAN it's not very useful. Those devices have directional antennas, not omnidirectional antennas.

how do i will manage theIP in this case??

In the same way as the others: you assign an unused IP of the same network.

i only have to direct the signal to a precise point 50mt far from that, no need to have connection on the other 300° (in the map, i'll place a receiving station between the pool area and Building B, and from that an AP for Building B, signal would come from AP3)

Great !!
