Possibly buying a CPE510. I have a location that has a POE (802.3af) switch (4 port) mounted. I was thinking about running a cat5 off that POE switch to the injector then connect on to the CPE510. The injector doesn't request power so it should work? Am I missing anything with this thinking? I understand what the purpose of the injector is, to supply passive poe at 24v, i need 48v for the cameras also and do not have any ethernet already existing to the outside of house that I could use only with injector.

If the switch is true 802.3af (auto-sensing PoE devices), it should work. Yes, the injector doesn't request power. For connections see the CPE510 installation guide:
