Network expansion

I have recently installed the er6020 into a small hotel in the Highlands of Scotland. Needless to say it has become apparent that the meagre 6.7meg (times 2 lines) is insufficient to provide WiFi to the guests and as such they would like to expand. I have looked at using the TP-Link quad WAN (with more BT lines - Infinity doesn't hit here until the end of next year) but I would like to ask the forum what the best physical configuration of the network should be to get the best result as the Quad WAN doesn't have a firewall. A diagram would be great. The APs are Unifi AP's and are configured separately.
