I just got A EAP610 and I was looking for how to change the wifi mode, I want to set my 5GHZ band to AX only, but cant seem to find where that option is.
Im running omada V5 in a docker.

There is no mode selection for EAP. It will negotiate with the client devices automatically.
But you can use Rate Control to limit the connection speed. If you only allow the highest density then it will not work on old wifi protocols.
Go to Settings > Wireless Networks, click Edit in the ACTION column of the wireless network which you want to configure, and click + 802.11 Rate Control
Also bear in mind if that was possible, you would only be able to connect AX (WiFi6) devices, everything else would fail to connect.
