Ok excuse my ignorance I have done some research on the internet but can my EAP110 Outdoor be powered solely from a POE Network switch OR do you HAVE to use the power adaptor that came with it

This access point only supports 24volt passive poe, so you cannot use a POE network switch on this device.

You can either use the included 24V power injector or a PoE switch which supports passive PoE (24V) such as EdgePoint R6 for example. I run EAP110-Outdoor on EP-R6, which is actually a router, but can be configured as a switch, too. You can not use IEEE 802.3af/at PoE switches, which operate at 48V.
