what actually loads throughput

If I understand correctly most of the LAN traffic is handled by the switch. Most LAN traffic has no reason to get to the router or for the router to have anything to do with it. (DHCP or outside dns searches excepted). On a system like ours with little or no VPN traffic pretty much all the router has loading its throughput is internet access. True?
And what is a good way to estimate what my throughput needs will be? Are there any tools to measure that? Do your business class routers give a way to get that info? Maybe peak load? Load over time?
