I just upgraded to an AX6000 router and was wondering if I could use my old AC2600 as a Access point or a Range Extender?

Generally, yes, you can just connect it to the AX6000 with an ethernet cable to set it up as an Access Point:

i have TPlink 840N hd.V 1.00
im on latest version of firmware but i donot have options to set router as APmode, can you pls describe how to manually make router as AP. like we make old TPlink router as wifi extenders there must be a way to make router as AP
