I've just had 500mb fibre installed , just wondering if the M5 will work at this speed on WiFi or will it throttle it.

The best WiFi speed I ever got from my M5 is 475Mbps. Realistically, expect around 400Mbps from Main Deco M5 and any Satellite Deco M5 with Ethernet backhaul, about half of that on Satellite Decos connected wirelessly to Deco mesh.

 

If you like Deco M5 form factor, consider Deco M9 Plus instead: 630Mbps on Main Deco, 490Mbps on wirelessly connected Satellite Deco, in my speed tests.
