my current setup is atm:

- omada 300 controller.

- er8411 router.

- 1x TL-SG3452X.

- 1x TL-SG3428X.

- 3x TL-SG3428XMP.

- multiple EAP 670 APs..

What is the best tool to test coverage & speed test for positioning my AP's?

Preferably an IOS applcation will be great.

It depends on how precise you want to measure that. For example:

You could use a free apps like Wi-Fi Analyzer to see the signal levels in the negative dBm values and OOKLA's Speedtest app for evaluating the performance.

There are more sophisticated tools like Wi-Fi heatmap software NetSpot, which has a free version.
