Should I activate UPnP and DMZ for online gaming on a TP-Link GE800 router, and how do I block ports forwarding in router

In general, if you disable UPnP all router ports wiould be blocked, unless you configure a manual port-forwarding (virtual-servers).
If you configugure DMZ for a host, all router ports would be opened for the host in question.
If you enable only UPnP, the router should open router ports autoomatically depending on the application needs (a computer game for example).

Thanks for the response.
My router is under CGNAT. I can't do port forwarding, but when I use UPnP, it opens UDP ports. When I activate DMZ for the PS5 as the host, it works well, but I don't know if it's forwarding ports or not. My concern is with my situation: which is better for me when playing online games on the PS5?

If you're under CG-NAT that means you're behnd double NAT - once by your ISP and once by your router.
Usually behind CG-NAT all ports are closed, but to be sure you can contact your ISP and ask them.
If your PS5 is working well when DZM is configured on GE800, just keep it like this and enjoy your PS5.
