Which IGMP version should i use for beat streaming and low ping? By default it is set to v2. Curious to know if it effects streaming and ping.

Yes, If you have older hosts in your network you would lose the source-filtering benefits for those specific clients
The easiest way to check if that suits your needs - switch to IGMP v3 and test your devices, if everything works as expected, leave as it is.

I don't know how it would affect streaming in your particular case,.but from my personal experience and for compatibility keep that on v2.

I don't think that it would affect your ping.
IGMPv3 introduces support for Source-Specific Multicast (SSM) and source filtering, allowing hosts to request data from specific sources (\(S,G\)) rather than just joining a group (\(*,G\)) as in IGMPv2.
While IGMPv2 supports only basic group membership, IGMPv3 enables more efficient traffic control, reduced network load, and is backward compatible.
IGMPv3 is backward compatible with IGMPv2 and IGMPv1, meaning an IGMPv3-capable router can operate in a network with older hosts, although it will lose the source-filtering benefits for those specific clients.
