M7350 - Cannot change from one sim provider to another

Hi - I've been using my M7350 with no problems with a GiffGaff sim (in the UK) - they use the 02 network so I thought I'd swap to a contract with 02 for more data but the new 02 sim doesn't seem to work. The M7350 screen still displays 'GiffGaff' across it and I'm not sure how to erase this old information and start from scratch. I don't think it's the sim as I've tried 2 different ones now with the same issue - it just seems like the M7350 wants to keep looking for the 'GiffGaff' sim.
