Hi Guys, isit possible that i setup two AX5400 Wi-Fi 6 Router both with static ip and on router mode and enable both openVPN and be able to ping from one to another with either one VPN connection?

Hi, you mean one OpenVPN Server, the other as OpenVPN Client, right?

Please note that the client side will be able to access server side but not vice versa.
