I think this is a two part question.
1. Can I power a second eap615-wall using the passthrough (switch: TP-Link TL-SG1008MP V2)
2. Can Install them back two back without interference with 2.4Ghz
I need to cover a large open area on both sides of the wall. (1000sqft)

I think this is a two part question.

Passthrough is only for LAN traffic, it wont provide POE. The AP connected via passthrough would need its own injector added between the Main AP and itself.
2. Can Install them back two back without interference with 2.4Ghz

Yes they can indeed, the EAPs (non outdoor versions) are designed for minimum bleed at the back side, used these many times back to back on the same wall.
However, 1000sqft (300 meters) is a lot of distance for one AP, personally I would be looking at least one more in that space. However it may be ok for you if circumstances are good, deffo requires a heat map / signal test.

I mean that this AP has Poe output. The switch I noted has POE+
What is the recommendation for getting a heatmap to determine coverage?

Thanks. I think TP-Link SG2008P is a poe+ switch. How do you turn on the poe output?
Does the eap615-wall accept both 802.3af and 802.3at and what does it output?

You are saying the indoor version is not suitable for back to back install? I am looking at the eap615-wall for indoor use because of the wall outlet bracket. What is the model of the outdoor version of this?
No, the Indoor and Wall are both suitable for back to back install as they only radiate the signal outwards from the face, virtually nothing bleeds backwards. My engineers call these claymores, hopefully that helps describe the pattern :)
The Outdoor versions however have omni-directional so will send signal in alll directions, therefore 50% will be back into the wall its mounted on. This isnt ideal for back to back setups.
