We're looking to completely gut our network and start from scratch as it's a mess of random switches and messy cabling.

What we plan to do is put two TL-SG5428 24 port switches at either end of the building and link them in the fastest way possible.

I believe I can aggregate two of the SFP ports at each end and join them that way, but what I don't entirely understand is how we would cable this up.

Would I need a pair of media converters at each end, then run CAT5/6 between the two?

Any recommendations on what hardware to buy would be gratefully received!

Not CAT5/6 cable. It is optical fiber.

Yes I understand that SFP is fibre, but I was under the impression I could use a short off the shelf SFP fibre cable to connect to a media converter then do the long run with good old CAT5/6.

So my question was, which media converters should I be looking at?

Bare with my lack of knowledge on the subject, I'm still learning things beyond the world of dumb switches :)
