i'am going to buy the "TL-WPA8630 KIT AV1200 WiFi". But iam wont also to use a old AV500.
Here my Question:
Use the new devices 1200 Mbit and the one 500 MBit ?
or
Use all 500 MBit ?

Yes, the link speed between powerline adapters is decided by the slower one.
For your case, you can plug one AV1200 to your main router, so at least the two AV1200 can reach the link speed AV1200.
