I have several APs. Often times, on a particular APs (EAP110-Outdoor and EAP610-Outdoor), clients connected to them have a super slow internet connections. I need to reboot them before their internet connections becomes normal. Considering that I have also scheduled a daily reboot of all the APs in the system.

Actually, it could just be that the Starlink all-in-one isn't the best box to drive a long distance signal from. Try inserting a quality 5 or 8 port ethernet switch (100M is good enough for the 110 AP) between the Starlink router and the AP and see if it has better 'drive' capabilities down the 100m CAT6 cable.
