@Sunshine
So yes the reason I don't want a gateway is I have some smart watches that just need to connect to my laptop - they don't need to connect to the internet - so this is to set up a local WiFi network.
As you suggest setting the Default Gateway to 192.168.168.1 does seem to work - though interestingly when I do that rather than the Router showing up as 192.168.168.1 on the mac it show as there being no router at all.
So I think there is a bug in the MR3020 on how it is handling the Default Gateway parameter since what I am entering in the 3020 admin page is not being reflected at all in what the Mac is showing it is getting back from the DHCP server in the 3020.
So something very strange is going on with the 3020 - with the Default Gateway set to an unused address 192.168.168.1 when I plug the Cat5 connection into my laptop it does not come up as connected in the Mac network panel - but it is connected because I can still access the 3020 admin portal. I am not connected to it via WiFi on the laptop - I have turned WiFi off. I have tried two different WiFi adaptors on the Mac an both do the same thing. When I plug in a normal Cat5 cable to these that is connected to my home network they both work fine and come up as connected in the Mac panel. So whatever the 3020 is doing negotiating the CAT 5 connection with the Mac does not seem to be working correctly.
