Hello. I have created an IP Group in Omada using the Settings>Routing>Policy Routing menu. However, after creating the group I cannot find where I can make edits to these IP Groups. Thank you for your help.

Standalone? Or Controller?
You would go to the same place where you create the IP range and group. Range is the basis of a group.
If you have created the IP group in the Omada controller, you will find it under settings, basic profiles, group.
