Minecraft 1.21.123.2 apk - High Latency and Packet Loss on Archer Router

Hoping to get some help with a really frustrating issue I'm facing. My kids are trying to play the latest Minecraft update, and I'm having trouble getting it to work smoothly on our home network.

Ever since they started playing this version, our network performance for the game has been terrible. I'm hoping someone with more networking knowledge might have some ideas.
Issue Overview
We're experiencing severe lag and rubber-banding, but only with this specific Minecraft version. All other games and streaming services are working perfectly. My setup is an Archer AX55, which has been flawless until now. The issue seems to be directly related to how this new update communicates with the router.
Symptoms & What I've Tried
I've gone through all the usual troubleshooting steps, but nothing has resolved the problem.

Consistent High Ping: In-game latency jumps to over 300ms.

Packet Loss: Noticeable packet loss, causing blocks to reappear and actions to be delayed.

Device Isolation: The problem occurs on both the PC (wired connection) and tablets (Wi-Fi).

QoS Settings: I have enabled QoS and prioritized the gaming devices, but there is no improvement.

Router Reboot: A full reboot of the Archer router and the modem temporarily helps, but the issue returns after about 10 minutes of gameplay.
