WiFi7 is the latest generation of hardware and its unique selling point is the 6ghz frequency which will offer much faster speeds due to the extended channel widths available in 6ghz.

In terms of skipping WiFi6, thats not the case.   Most of their current hardware is WiFi6 and has been so for a few years now, they are now just starting to release the WiFi7 versions as previously mentioned.   WiFi6 is known as the AX standard, the Deco X60 and the AX3000 are both WiFi6 (AX) devices.

Perhaps you are referring to WiFi6E?  Namely the extension on WiFi6 into the 6ghz frequency?   This was an extension (wave 2) of WiFi6 that is only now just becoming available in hardware, however the newer WiFi7 standard arrived at virtually the same time which also has 6ghz support.   Most vendors seen no advantage to refreshing their hardware for 6E, when 7 was right on the door also, made more sense to just hold off and release 7 devices.
