What happens if I connect both a POE lan cable AND a DC power adapter at the same time? Does it become redundant? Does one take priority over the other? Does the unit fry?

Nothing. The injector won't register a valid PD signature on it's uplink port and the upstream POE will never turn on. Using a passive POE switch will just be interrupted as the input side of injector will ignore any power applied. You don't get 'free' redundancy doing this, you just waste a POE port.
