Can 2 RE650's be used to boost WiFi signal further or in different areas?

Do you want to connect them like the main router ))((RE650))((RE650 or RE650))((main router))((RE650?

 

Theoretically, both are okay, while the performance of the second RE650 on the first topology will be affected a lot due to the distance and obstacles. To ensure the performance, it is suggested to connect them as the second method.
