If I have multiple deco units connected to my router using ethernet through access point mode using the ethernet backhaul, will the deco's still have the same mesh system and performance as if it were in router mode?

The access point of Deco still support the whole Mesh system;

You may have to wire your Decos differently, if you want to keep Ethernet backhaul after you switch Deco mesh to Router mode. See General questions about Ethernet Backhaul feature on your Deco.
