Model: Archer AX73
Hardware Version: V1
Firmware Version: 1.2.0 Build 20211222 rel.74632(5553)

I upgraded to firmware 1.2.0 Build 20211222 rel.74632(5553) and now I can't disable 2.4ghz.  This is what I see now:

According to the user guide I should be able to disable 2.4ghz:

Before I upgraded the firmware I looked at what's new and it did not mention that it would remove this functionality. I would not have upgraded the firmware if I knew I would lose this functionality!  Is there any way I can downgrade the firmware?

Disabling Smart Connect solved the problem, thanks.  I think I previously had Smart Connect enabled before I upgraded the firmware and was still able to modify those settings.

Are you still able to disable the 2.4G network if you go to the Wireless page or Advanced > Wireless > Wireless Settings page, can you still find a separate 2.4G and 5G network? Be aware that only when the Smart Connect is disabled can you modify the 2.4G and 5G network settings.

Glad to know that. If you are sure that you can modify the 2.4G settings when the Smart Connect is on before the firmware upgrade, I guess the developer might change this in the latest version, as you can see "9. Optimized Smart Connect feature" in the release note.
