Why are some newer versions of decos so out of date?
I have 3 different Decos: M5, M9 Plus, XE75
Why are older decos running more recent versions and the newer deco like the XE75 is only on version 1.1.8?
M5: 1.6.1
M9 Plus: 1.5.6
XE75: 1.1.8

In short, the version numbers are not standard across all hardware and will differ from model to model. Its best not to compare these as they always start at 1.0 for each device.
All hardware comes out with firmware 1.0 for that device. Take the M5 for example, it came out about 3-4 years ago and started with 1.0 Since then it's had multiple updates and now is on 1.6.1 as you say.
The X75 however is a new device and came out 2022 with version 1.0 firmware, its had one update since so is now on 1.1.8.
You will likely find that any common fixes / bugs / updates that came out in the years since the M5 was released will be incorporated in the 1.0 release for the X75
