One of the three Deco x60 unit randomly disconnects from the main unit and reboots.
The led flashes red, and the Deco app reports the unit is not reachable.
From where can get the system logs? And why is it reboots?

In case there is any hardware issue, could you please try to swap the location of the two satellite Deco X60s to see whether the disconnection/reboot issues follow the same Deco?
Have you seen the satellite Deco turn yellow, then red again during the reboots?
Do you need to restart or factory reset it to temporarily restore its connection?

No, by the time I reach it, I only see red.

No, it looks like the unit restores the connection on its own.
The issue is pretty random and difficult to catch when it is happening. As per your recommendation, I will try the following and report back.
I will swap the position of the problem_unit with another one, I have 4 in total, 3 x60s, 1 x50 outdoor. To detect the issue, I will attempt to detect the event using an IoT device connected to the problem_unit; I will try to use a Tapo CCTV cam to record changes to the LED colours.
Can I access the system logs in the unit? It would make troubleshooting the issue a lot easier.
