Advice on which system to replace my Eero with

I'm looking to replace my existing Eero 6 Pro mesh network, and wanted advice about which Deco system to buy for my needs.
My existing system is 3 x Eero6 wifi units + 2 x Eero6 extenders. The main problem I have with Eero is that I cannot direct my devices to connect to specific nodes, with the result being that every time Eero restarts (normally their monthly update), the pods come online at different times and devices try to connect to whatever is on first ... with the result being that some devices end up connected to pods so far away that the service is unusable. The system/devices don't self-correct and I end up with a Google camera that can't connect, or Nest thermostats that are laggy. I can correct the issue to some degree by turning devices or nodes on/off, but even then it's like playing whack a mole, not to mention a giant pita for something you want to plug in and forget. I never get an optimal wifi experience for all my devices despite have a strong mesh that covers all corners of my home.
My understanding is that the Deco series will allow me to direct what node a device connects to. Assuming this is correct, then I need to decide which Deco to replace my existing system with.
About my home. I live in a large 2 story condo of about 2,000 Sqft. Normally you could service this with 1 or 2 pods, but there are thick concrete walls in spots, so I believe I need 3 pods at least (although it took 5 from Eero placed very specifically to get full coverage). I'd love to use as few pods as possible, but not at the expense of quality wifi. If I need more to ensure amazing wifi, that is ok and I'd rather pay the extra cost if needed.
Anyone able to suggest which Deco's might best suit my needs? Many thanks and cheers - P.
