I know that I cannot install a VPN on an M7350 router, but would I have any problem using a VPN on my Macbook Pro when connected to either this router or an M7650?

Hi, the VPN passthrough is enabled on the M7650/M7350 by default; it should be fine to initiate a VPN connection directly on the MacBook Pro.
