I have around 250 apps in different locations and am getting reports that there is are lot of interference and dropped packets.
Is it the controller's job to do these configurations (channel width, power, channel selection,etc...) by its own, or i have to config aps one by one.
Am I missing something here?

You can use the interference and WiFi optimisation tools in the controller but it only gets you so far. If you have a high density of access points, you might need to manually tune channels and power on ones that are close by
