Can I just place a ceiling mount AP like the EAP773 or EAP783 on a desktop instead of mounting onto the ceiling? Will be affect its performance in term of speed and coverage?

No, it won't affect its performance.
But the wifi signal is mainly located on the front panel of the EAP. Below is the datasheet of EAP783, you can refer to the Antenna Radiation Patterns.
