My wifi 6e devices don't recognize the 6GHZ signal. Should I only set up a 6GHZ SSID vs both 5 GHZ & 6 GHZ SSIDs?

If you would like you can set it up, however it may be a result of the 6GHz being meshed and your devices receiving a better connection with the lower bands. I would also make sure, depending on your device, that you have set the 6GHz network to be used for a client connection and not just for a backhual.
In general, a 6GHz network will provide better bandwidth,latency, and speed; however, in homes, it is much much more susceptible to interference, with the 2.4 and 5GHz bands providing a much stabler connection - which oftentimes results in your devices 'skipping over' the available 6GHz connection. It is up to your network and the performance you see on your devices to decide what provides you and your devices with the best experience.
