Looking to upgrade Wifi5 network to Wifi7 - questions

I'm not sure this is the right place to post this
I have a Wifi 5 wireless network that works well but I was thinking of upgrading to Wifi 7 for possible increased speed/lower latency.
My current system is simple. Verizon FIOS ONT - Verizon G1100 wireless router (transmitter turned off) - TP-link T1600G-52PS switch - a total of 5 Wireless access points (Omada AC1750 x 4, EAP225-Outdoor x 1). The Verizon router is acting as the main router. There is an Omada OC-200 hardware controller plugged into the switch and the whole network is easily managed from the Omada phone app.
Upgrading to Wifi 7 would involve:

replacing the Wifi 5 Access points with Wifi 7 versions (EAP7** for indoor units and EAP772-outdoor for the outdoor unit) all PoE

Is my switch up to the increased throughput ?

I'm guessing that I can still use the OC-200 (or upgrade to the new OC-220) controller

Should I continue to use the Verizon Fios router as the main router for the system or should I place it in bridge mode and use a Wifi 7 wireless router like one of the TP-Link Archer units. Would this all work and would it all be manageable fro the Omada app? More importantly, would this result in better performance of my wireless network?
Is there anything I'm missing?
