Hi @3dog,
You should have no problem taking advantage of this feature as the sunrise and sunset options are used in the Automations System for a trigger. After setting an automation trigger for sunset or sunrise, you can control any of the devices in your Kasa Smart Home. You should also be able to configure these directly from your device settings under 'Scheduling'

@Riley_S Thanks for the reply. But specifically, is the "offset" feature also available with the EP40 (not just sunrise and sunset)?

Yes, the offset option would be available for the EP40. The Smart Action feature allowing for sunset and sunrise automations includes the offset option, before you even select what device to control.
