I have Tapo S505 smart switches with Matter. Why can't they be categorized as a fan in HomeKit like the Meross switches can?

This is because the S505 "identifies itself" to Apple Home during the "Interview Process" as a "Light" rather than a "Switch" (which is what Wemo and Meross do).

 

A "Switch" in Apple Home can be configured as a "Switch" a "Fan" or a "Light". A "Light" in Apple Home can only be a Light (this is just how Apple wrote their code).  I assume that TP-Link identifies the S505 as a "Light" for consistency with the S505D (dimmer) since that has to be identified in Matter as a "Dimmable Light" (a light switch that supports dimming).

 

Either TP-Link has to change how the S505 is identified via Matter to a "Switch" or Apple has to offer the same capability in Home for a "Light" that they currently do for a "Switch".

 

Could TP-Link make that change, yes, however that would impact existing S505 installations and would be a non-trivial amount of effort at their end and would be counter to what other manufacturers are doing.  Apple could make the change in Home without impacting existing installations, however I'm not sure what the incentive would be for them to do it.

 

This is one of the reasons that I use Home Assistant (HA) as my Primary Hub (that is where all my devices are paired) since I can then use an "HA Template" to convert (for example) a Light to a Switch. I then publish the "Template Switch" to Apple Home from Home Assistant which is what the family uses to interact with devices in the Home (using HA's internal Homekit bridge). All the family ever seea is a switch that is displayed as a fan etc... There is a fairly steep learning curve with HA (plus an approx hundred dollar hardware cost) but it's animations are much more powerful than Apple Home (or Googles equivalent etc) and having learned it I'm glad I made the change.
