Why is the mesh feature only available in Router Mode? Can we get the Mesh functionality when the AX6000 is operating in AP Mode?

Onemesh is not supported in AP mode - check this FAQ - Q8/A8.
AX6000 supports only Onemesh, which is a TP-Link proprietary mesh and it's unlikely to have this implemented.
EasyMesh on the other hand is standardized approach which eventually could implement mesh in AP mode - check this comparison.
