I have setup the network in our house over 3 floors. Kitchen, landing on first floor, Top floor. This is over a 260m2 house.

The problem i have is that reception  is fairly poor on the satellite decos, and speed is variable and very low - ranging from 4 mbs to 20mbs, whereas we are getting up to 150mbs off the main router.

This is even whilst standing next to the satellite deco.

Is there anything I can do to improve it?

I bought it as a solution to upgrade from our power line extenders  but we were getting better speed from the powerline extenders, so I will return the Deco if I cant improve it.
