I have a WiFi 6 from a Linksys router MESH and would like to extend coverage into our garden. The TP-Link EAP225 looks to be a good option, but I'd like to know if I can just incorporate it into my existing MESH wirelessly?

No.  You would have to wire the EAP225-outdoor back to the router, and you would not have fast roaming either between the TPlink and Linksys coverage areas.  It would then 'work', but with only a fraction of what it is capable of in a full Omada setup (which you may not need or even want).
