Is there no way to put the AX10000 into bridge mode?  I'm not seeing this option anywhere.

There is no bridge mode per say but there is an AP mode, which disables all routing features and enables the router to work as just an Access Point.  You can find this feature in the UI by clicking on Advanced > System > Operation mode.

I saw this but the way it was worded seemed like the LAN ports would be disabled, will they still be active and just function like a switch?

Yes in AP mode the wireless and Ethernet are still working, but instead of the router providing IPs the Host router does.
