What's the point having a temperature sensor if I cannot turn on/off my devices?
Say I have a TAPO temperature sensor, and I want to turn on/off my central heater. What options do I have? none. You need to provide a smart wifi switch (with dry contact(s)) to let people automate those devices.
The only option is to use Alexa/SmartThings etc to turn on/off another brand's relay (such as Shelly)

Tapo has many types of smart devices that can work with the temperature sensor in automation, such as the smart plug, smart switch, smart light bulbs, etc. You can refer to the following article to learn more about Tapo automation and what kind of skills are supported in automation for different types of smart devices.
How to create Smart Action (Automation or Shortcut) on Tapo app
In fact, if the heater is a plug-and-play device with no additional power button, then you can use a smart plug to control the heater on and off.
It seems more like you need a different form factor device for your usage needs, a smart relay perhaps? You can vote for this feature request post and join the discussion there. Multi Functional Relay
By the way, I recommend changing the post title to reflect your feature or product requirements more accurately.

I use the Tapo infrastructure as my intelligent central heating controller. I use a 9 kw boiler controlled by a S210 on 12v, central heating pump (P110 on 240v) with motorised valves (s220 on 12v) to manage the hot water and radiator flow with 3 different temperature sensors (T310 stuck to tank and t315 upstairs and downstairs) to control different zones with Kasa ke100 valves with door sensors in high traffic areas.
You have to get fairly inventive with the rules, but it works really well. I've done this on four sites now. 2 in houses, one in a lorry and one on a boat.
i tried to use the T310 to control a hot tub, but I couldn't find a way to accurately measure the temperature (it needs a remote waterproof sensor) so ended up using a cheap Chinese thermostat and I just use the Tapo stuff as a safety when the thermostat beaks down.
Overall, for what you are describing, Tapo stuff works really well.
