I then have to go and restart the switches. Is there a way to make the switches restart until the wifi connection is reestablished? It is frusturating.

HS200 will try to request Internet from router when it loses Wi-Fi connection, but I'm afraid there isn't auto restart option.
You could try to reserve a fixed IP for smart switches (IP reservation) on the router and put router or AP closer to smart switch (ensure strong WiFi signal) and see if that helps with the stability.
