If it were me, I would reset the router to factory and reenter the minimum settings. Since your devices are not Wi-Fi 6 (802.11ax), I would turn off OFMDA and not use AX as an option in the WIFI...

Have you tried deleting (forget) the WIFI network and then re-establishing it as that works many times. Also power cycle both router and the devices with the issue.

You could delete (forget) the 5GHz network on your iPhone providing you use different SSIDs for each network that way it will always be on the 2.4 GHz network.

I just changed it to off, clicked save, reboot and the 5GHz band was gone. Then set it back on, save, and reboot and it is back on.
