When I go into the Tapo app I can choose which resolution to record in (360,720,1024) for only 1 of my camera's. The other 2 have an option for Hi/Lo on the live screen. How do I get 1024 recording for all my cameras?

You can manually switch between HQ (1080P)/ LQ (360P) on the "Live Display" page to use 1080P.
As far as I know Tapo C200 V2 allows setting the resolution, V1 uses HQ/LQ.
